i think i may have found the most delicious and easiest breakfasts around. ok, it's probably not the easiest. a bowl of cereal is easiest. or a banana. a banana is a pretty easy breakfast. but today's breakfast was way better than a banana, so the little extra work was worth it.
of course i never measure anything, which is why i'm a good cook, but not a good baker. so, you will have to make do with my estimates. but i am pretty sure this is a no-brainer/no-fail recipe.
i made a pancake batter out of about 3/4 cup bisquick mix and 1/2 cup water. enough to make it pancake batter consistency, at least. i then added about three shakes of pumpkin pie spice. i cored an apple (which was the hardest part because i don't actually have an apple corer) and dipped each slice in the batter and cooked! voila, apple cakes.
of course, you can eat them plain, or with yogurt or syrup, but we chose almond cocoa spread (from trader joe's) (nutella would be a good substitute if there isn't a trader joe's nearby) (peanut butter would also be delicious) because almond cocoa spread makes everything better.
and the kids loved it...happy kids = happy mom!
(no picture of happy mom because she just worked out and currently has about a quarter cup of calming oil slathered in her hair.)
